I was given a brief outline of what to do by the chef at my local Pick n Pay in Kloof, and found a similar recipe online which I added to my Plan To Eat profile.

Basically I followed the recipe above, but instead of fresh basil I use 1 tsp dried basil, 1 tsp dried origanum, 1 tsp dried parsley and added a dash of Worcester sauce - I also threw in a tsp of thyme, but I think I'll leave that out next time.
I also used cheddar and feta cheese instead of parmesan, and fried up an onion with the tomatoes - mainly because it never occurred to me that you could cook tomatoes without onions.
I topped the lot with the cheeses and completely omitted the egg because I didn't know about the egg until I read the recipe just now.
As it happened it turned out pretty darn good. The Handsome had seconds, and when I went back for seconds I was gutted to discover ... an empty dish!
The Moral: sometimes it's a great idea to loose the recipe and wing it.
